      I just listened to this again and it’s great! Love Sheri’s advice and a recommendation based on simplicity, minimal cleanup and cooking in batches. I know the recipe is dead simple and I jotted it down, but in the podcast, she said the make-ahead crustless quiche recipe is on her website, and I searched over there and cannot find it. Just a heads-up!

      For anyone else wondering it is:
      1. Preheat oven to 350F. Grease two 9-inch pie plates or Pyrex-type baking dishes.
      2. In a large bowl, whisk 1 dozen eggs together (by “scramble” I think she means mix, not cook).
      3. Add 2 (1-lb) bags of frozen chopped spinach ( no need to thaw first), and 1 (1-lb) block of feta cheese (crumbled or finely chopped).
      2. Bake at 350F for 60-90 minutes until set in the middle (not wet or jiggly, a knife will come out clean or with dry crumbs), but start checking around 50 minutes.
      *Add leftover bits of cooked veggies or meat, or mix different types of cheeses and veggies (for example: frozen broccoli and cheddar cheese).
      *If you use fresh or room temperature veggies, it will cook a lot faster, so start checking around 30 minutes.
      *Freezes well. Reheat in microwave.
